It comes from
a typical blend of several grape varieties
allowed for the appellation, such
as mainly Grenache, Mourvèdre, Syrah, Cinsault
and Carignan. To these one can add a multitude of
secondary grape varieties such as
Cabernet-Sauvignon, Durif, Castet, Brun-Fourcat,
Manosquin, Terret Gris, Tibouren...
- Maceration-fermentation in temperature
controlled casks.
- Ageing in French oak barrels for 18
months.
- Length of raising: 18 month.
The character of the Palette "terroir" is expressed
through fruity and spicy flavours, fine tannins and
nice fullness in mouth.
You will
find the same grape varieties as in the red
wine with "Vieux Muscats Noirs" added. It is
made partly by red tank bleeding and by
direct pressing. Some lots complete their
fermentation in oak barrels where they will age
before being assembled. Its fruitiness with an
expressive and elegant flavour will continue
in a long and generous final tasting. A wine for
gastronomy.
Clairette, Grenache
Blanc, Ugni Blanc, as well as secondary grape
varieties among which some have disappeared
elsewhere: Muscat d'Alexandrie, Muscat Petit Grains,
Panse Muscade, Panse du Roy René, Picpoul, Terret,
Pascal, Tokay...will be
found in the assembling process.
- End of fermentation in oak casks.
- Ageing in barrels for 12 months.
